Steamed mussels

Try this simple but delicious recipe and you will see how surprisingly easy mussels is to cook at home. It is cheap to make but very elegant and satisfying.

With few ingredients you can make the best appetiser.

We all should eat more mussels. They are sustainable and with no negative impact on our environment.

Ingredients:

  • 2 small onions
  • 4 cloves of garlic
  • 3 small carrots
  • 3 stalks of celery
  • 80 ml white wine
  • 100 ml chicken or vegetable broth
  • 200 ml cream
  • 500 g mussels
  • Fresh parsley
  • Salt and pepper

Methods:

  • Start by dicing the vegetables and gently fry them in a pot until they start becoming soft.
  • Add the white wine, let it reduce, then add the chicken or vegetables broth. Let everything come to a boil then add the cream.
  • Boil for 10 minutes for the flavours and aromas to infuse in the soup.
  • In the meantime, wash the mussels well under the cold water and check them if they are alive or not. The way to do that is to press the opened mussels. If they are closing it means they are alive and good to cook. If we press the mussels but they are not closing, it means they are dead, and we need to discard them.
  • When the mussels are well washed and checked add the mussels in the pot, cover with a lid, and let it boil for 10 minutes or until the mussels have opened.
  • Add the fresh parsley and serve warm with toast and a glass of good white wine.
