Ingredients:
- 1/2 onion
- 4 cloves of garlic
- 50 g ginger
- Zest of a lemon
- 1 red chilie
- 1 and 1/2 teaspoon red curry paste
- Salt
- 1.5 l chicken broth
- 200 ml coconut milk
- Chicken thighs or breast
- Noodles of your choice
- 1 soft boil egg
- Parsley or Coriander
- Peanuts
- Fried tofu
- Spring onions
Methods:
- Start by blending in a food processor the onions, garlic, chili, lemon zest and the ginger.
- Add oil to a pot and fry the mixture then add the curry paste.
- Let everything fry on medium heat for about 3 minutes then add the boiled chicken thighs or breast.
- Pour the coconut milk in the pot and let everything get to the boiling point then add the chicken broth.
- Use a lid to cover the pot and let the soup boil for 30-40 minutes on low to medium heat.
- Season to taste.
- Serve the soup with boiled noodles of your choice , soft boiled eggs, fried tofu and spring onions.
