Stuffed pork tenderloin

This flavourful creation combines the tenderness of the pork with the rich and aromatic flavours of the stuffing, resulting in a delectable and satisfying dish. The mushroom bring an extra umami taste,  and the leeks complement the pork’s natural sweetness creating a wonderful depth of flavour.

Ingredients:

  • 500 g pork tenderloin
  • 1 leek
  • 400 g mushrooms
  • 100 ml white wine
  • Salt and pepper
  • Fresh thyme
  • Smoked paprika.
  • Coriander powder

Methods:

  • Start by cutting and preparing the vegetables.
  • Fry the mushrooms in a hot pan and season with salt and pepper.
  • Fry also the leeks in the same pan.
  • When the leeks are softened add the white wine and let it cook for about 2 minutes until the flavors are well combined.
  • With the help of a sharp knife cut the pork tenderloin starting from the thick part of the meat cutting down to the thin part. Butterfly the tenderloin, keeping the knife parallel with the cutting board and cut carefully .
  • Season the meet with the chosen condiments and on top spread in a even layer the fried leeks and the mushrooms.
  • Carefully roll the tenderloin, place it in a tray and drizzle oil and water .
  • Roast in the preheated oven at 180 Celsius for about 30 minutes.
  • After roasting let the stuffed tenderloin rest for 10 – 15 minutes then cut the meat in medium slices and serve with sauce, salad or roasted vegetables.
