Pumpkin soup is a comforting dish that captures the essence of autumn in a bowl. It’s both hearty and heartwarming, making it a popular choice for chilly days.
Ingredients:
- 1 Hokkaido pumpkin
- 2 small red onions
- 1 garlic head
- 2 tablespoons vinegar
- 250 ml Cream
- Salt and pepper
- Chilli fakes
- Pumpkin seeds
Methods:
- Start by preparing the vegetables. Cut the pumpkin at the ends and then cut it into half. With the help of a tablespoon scoop the seeds out then cut the pumpkin in medium chunks.
- Set them on a tray , season with salt and pepper , drizzle oil and bake until soft and the natural sugars start to caramelize.
- Cut also the red onions, cut the garlic in half and place them in a tray. Season with salt and pepper, vinegar, oil and bake for 15 minutes until the onions and the garlic are getting soft.
- Place the baked vegetables in a bowl and with the help of an immersion blender blend the vegetables until smooth.
- Add the double cream and mix until is incorporated in the soup.
- Season to taste and serve warm with roasted pumpkin seeds, chilli flakes and toast.
