Salmon with broccolini is a harmonious pairing of succulent fish and tender greens. Ingredients for marinade:
- 3 cloves of garlic
- Ginger
- 2 tbsp soya
- 1 tbsp sesame oil
- 1/2 teasp honey
Ingredients for the sauce:
- 1 small red onion
- Zest of 1/2 orange
- 130 ml fish broth
- 80 ml cream
- 30 g butter
2 pieces of salmon filet
300 g broccolini
Methods:
- Start by making the marinade in a bowl.
- Place the salmon in the marinade and let it rest in the fridge for 30 minutes for the fish to absorb all the flavours .
- Steam the broccolini for 4 minutes, cool it in cold water for the cooking process to stop, then drizzle sesame oil , soya and sprinkle sesame seeds over the broccolini.
- In a frying pan, fry the salmon under medium heat with the skin part down. Let it fry for 4 minutes then turn it and fry the other side for another 4 minutes.
- After the fish is fried and the broccolini is steamed, this leads us to the last step in our recipe, which is making the sauce.
- In a sauce pan melt the butter and gently fry the onions and the orange pill until the onions get translucent.
- Add the fish broth, let it reduce then add the cream.
- Let everything cook and reduce until the sauce is getting ticker
- Serve warm with a glass of good white wine.
