Today I present to you a very simple but delicious and nutritious recipe.After all the heavy Christmas food it is refreshing to have something simple and light on your table.So please try this recipe and it can become one of your favourite dip.
Ingredients:
- 400 g cottage cheese
- 1 red pepper
- ½ of english cucumber
- 2 spring onions
- 60 g extra virgin olive oil
- Salt
- 2 flat breads
Procedure:
- Start by cutting the cucumber lengthwise and remove the seeds with the help of a spoon, then cut it into medium size dices.
- Cut also lengthwise the sweet pepper then dice it, and at last cut the spring onion.
- Add to a bowl the cottage cheese then add the diced vegetables, salt and the extra- virgin olive oil.
- Mix until well combine and the vegetables are evenly distributed in the cottage cheese then let it set in the fridge for 20 minutes.
- Cut the flat bread into the desired shape, place into a tray, drizzle oil and bake for 5 minutes at 180 Celsius.
- Serve the cottage cheese dip with the homemade tortilla chips.
