Focaccia with potatoes , caramelised onions ad fresh rosemary

Imagine the aroma filling your kitchen as this focaccia bakes to golden perfection. It’s the ultimate comfort food, ideal for any occasion – whether you’re serving it as a side dish, enjoying it as a snack, or impressing guests at a dinner party.

 

Ingredients:

  • 1000 g bread flour
  • 10 g dry yeast
  • 20 g sugar
  • 10 g salt
  • 50 ml olive oil
  • 700 ml water
  • 2 potatoes
  • 1 onion
  • Fresh rosemary
  • Sea salt

 

Procedure:

  • Start the recipe with activating the yeast. In a bowl add the dry yeast, sugar and 30 ml lukewarm water, stir well, then set the yeast aside to foam and activate for 10 to 15 minutes.
  • In a mixing bowl, add the bread flour, salt, the activated instant yeast, olive oil and the water then with the help of a standing mixer make the focaccia dough.
  • Mix for about 5 minutes or until the dough has a smooth surface and is elastic.
  • After mixing , drizzle olive oil on top of the dough to avoid getting dry on top, cover with plastic wrap or a kitchen towel and let it rise for about 1 hour.
  • After it has rise for 1 hour start stretching the dough. Deep your hands in cold water( this helps preventing the dough to stick to your hands) then take parts of the dough and pull it up than bring over the top of the dough.
  • Repeat this process for about 2 minutes then cover the dough with plastic wrap or a kitchen towel and let it rise for another hour.
  • Meantime boil the potatoes and make the caramelised onions.
  • After the second rise of the dough, oil a tray with olive oil, add the dough and with the help of your fingers start spreading evenly the dough in the tray.
  • The last step is to add all the toppings on the focaccia dough.
  • On a cutting board , press the boiled potatoes with your hands until they break into small to medium pieces, then press them down into the focaccia dough, followed by the caramelised onions and the fresh rosemary.
  • At the end drizzle olive oil on top and sprinkle sea salt then bake in the preheated oven, at 190 Celsius for about 30 to 40 minutes or until it has a golden brow colour on top.
  • Serve warm or cold at any meal of the day!
  • Enjoy!
