Ingredients:
- 5 egg yolks
- 80 g sugar
- 500 ml heavy cream
- 1/2 vanilla pod
- 20 g sugar for caramelisation on top
- Fresh berries for decoration
Procedure:
- Put the egg yolks in a bowl together with the sugar and whisk until well combined.
- Cut the vanilla pod on the length and with the help of a knife scrap the vanilla seeds inside then add them to sauce pan together with the heavy cream.
- Bring the saucepan over medium heat and warm up the heavy cream until it starts to simmer, then take it off the heat and let it cool to room temperature.
- Pour the cooled heavy cream over the egg yolks and mix until well combined.
- Put the ramekins in a baking tray and fill it 1/3 with water, then fill the ramekins with the custard mixture.
- Bake the crème into the preheated oven, at 120 Celsius for 30 to 35 minutes. When baked, the crème has a little movement in the middle when it’s shacked.
- Let the crème brûlée set in the fridge for 4 hours, then sprinkle sugar on top of the crème and with a kitchen torch caramelise the sugar on top. Let the sugar cool down and form a crust, then decorate with fresh berries.
