Ingredients:
- 1 Onion
- 3 Cloves of Garlic
- 500 g Cherry Tomatoes
- 750 g Mussels
- 85 ml White wine
- 30 g Tomato Paste
- Salt and Pepper
- Smoked Paprika
- Chili Flakes
- Fresh Parsley
Procedure:
- Start the recipe by rinsing the mussels under cold water, scrub the shells, and remove any beards. Discard any that are cracked or stay open when tapped.
- Finely chop the onions and the garlic and cut in half the cherry tomato.
- In a large pan , drizzle olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Stir in the minced garlic, and cook for another 1-2 minutes until fragrant.
- Add the cherry tomatoes to the pan. Let them cook down for about 10 minutes, stirring occasionally.
- Pour in the white wine and bring the mixture to a gentle simmer. Let it cook for 2-3 minutes to let the alcohol evaporate and flavors to develop then add the tomato paste and let the sauce cook for another 10 minutes.
- Season with salt, pepper, smoked paprika and chili flakes.
- Add the cleaned mussels to the pan, cover with a lid, and steam for 5–7 minutes, shaking the pan occasionally, until all the mussels have opened.
- Discard any mussels that haven’t opened. Sprinkle with fresh parsley and serve hot with crusty bread.
