Chocolate mousse

Chocolate mousse is the perfect dessert when you desire something creamy, rich and yet fluffy, airy and luscious.It has an intense taste of chocolate it is easy to make with few ingredients.It is perfect to make it for weekends or make when you have friends in visit. It will look so pretty served in a martini glass or in small dessert glasses. You can serve it with orange peel as i did or you can choose your own delicious decorations as berries, mint leaves, whipped cream, chilli flakes, chocolate flakes.

Ingredients:

  • 200 g dark chocolate
  • 3 egg yolks
  • 3 egg whites
  • 150 ml double cream
  • 120 g granulated sugar
  • Candid orange peel

 

Methods:

  • Melt the chocolate in the microwave or on a water bath and let the chocolate cool down.
  • In the meantime separate the egg yolks from the egg whites
  • With the help of a hand mixer whip the egg whites until they become airy and fluffy.
  • Add the sugar over the whipped egg whites and mix until they have a marshmallow consistency.
  • In another bowl whisk the double cream . An important tip is to whisk the double cream until it has soft peaks.
  • Over the cold , melted chocolate add the egg yolks and mix until incorporated.
  • Add the egg whites , one spoon at a time and gently incorporate it in the chocolate, being careful not loosing from the volume and the air of the egg whites.
  • With a spatula take blends of chocolate and egg whites from the bottom of the bowl and bring them on the top.
  • Don’t over mix the mousse, it can loose volume and in the end it will not be light and airy.
  • Add the whipped cream and gently fold it in the mouse.
  • Fill your recipients and let them cool for minimum of6 hours or over night in the fridge.
  • Before serving add the candied orange peel on top.

 

Serves: 6 dessert glasses
