Ingredients:
- 750 g bread flour
- 400 g lukewarm water
- 10 g dry yeast
- 2 Tbspoon sugar
- 2 teaspoon salt
- 15 ml sunflower oil
- 1 Tbspoon bicarbonate of soda
- Sesame seeds
- Poppy seeds
- Sunflower or pumpkin seeds
Procedure:
- Start the recipe by choosing a good bread flour with a high protein content, for about 12-13 %.
- In a mixing bowl add the flour, sugar, water and the dry yeast, then with the help of a spatula mix just for the yeast to distribute and the flour to absorb the water.
- Add the salt over the mixture then, using the hook attachment mix everything with the help of a standing mixer until a dough is formed.
- Mix for about 5 minutes, add a drizzle of oil, and mix again for about another 3 to 4 minutes or until the dough is elastic and has a smooth surface.
- Place the dough in an oiled bowl, cover with plastic foil and let it proof in a warm place until is double in size.
- After the dough has proofed, divide it into 10 equal size pieces, roll them into a ball, then take each ball and make a hole in the middle and start stretching it making the hole bigger of about 3-4 cm.
- Next step in our recipe is to boil the bagels. Place a pot of water on the stove, bring it to a boil, reduce the heat to simmer, then add a tablespoon of bicarbonate of soda and a tablespoon of sugar. The bicarbonate of soda gives the bagels the characteristic chewy texture.
- Carefully place some bagels in the pot and let them boil for about 30 seconds on each side, then take them out on a kitchen towel to absorb all the excess water.
- Brush the bagels with some egg wash and sprinkle with sesame seeds, poppy seeds, sunflower or pumpkin seeds.
- Preheat your oven and bake the bagels at 200 Celsius, for about 20 minutes or until they are golden brown and crispy.
