Ingredients:
- 500 g Salmon
- 1/2 Onion
- 2 cloves of garlic
- 50 g butter
- 50 g flour
- 600 ml Milk
- Salt and Pepper
- 500 g spinach
- Fried Capers
Procedure:
- Start the recipe by placing the salmon in a tray, season with salt and pepper, drizzle oil , place lemon slices and bake in the preheated oven, at 180 Celsius for about 12 to 15 minutes.
- In the meantime, start blanching the spinach. Bring a pot of water to the boil, then add the fresh spinach, let it cook for about 1 minute, then place it in a bowl with ice cold water to stop the cooking process.
- After the spinach has cool down in the cold water take it out and with the help of your hands, squeeze all the excess water.
- In a saucepan, melt butter under medium heat and sauté for about 3 minutes finely chopped onion and garlic.
- Add the flour and with the help of a whisk, mix everything together. Let the flour cook for 2 minutes making sure to mix continuously to avoid burning the flour.
- Carefully add warm milk in small portion and mix vigorously with the whisk to avoid forming clumps in the sauce.
- After all the milk is used , add the blanched and squeezed spinach and mix until well incorporated in the sauce.
- The last step in our recipe is to deep fry the capers, which you can make in a saucepan or a regular pan.
- Serve warm with a green salad and a glass of good white wine!
