Blue Mussels served in Tomato Sauce

Fresh, tender mussels simmered in a rich, garlicky tomato sauce with a hint of chili, herbs, and white wine—this dish brings the taste of the sea straight to your plate.

Ingredients:

  • 1 Onion
  • 3 Cloves of Garlic
  • 500 g Cherry Tomatoes
  • 750 g Mussels
  • 85 ml White wine
  • 30 g Tomato Paste
  • Salt and Pepper
  • Smoked Paprika
  • Chili Flakes
  • Fresh Parsley

Procedure:

  • Start the recipe by rinsing the mussels under cold water, scrub the shells, and remove any beards. Discard any that are cracked or stay open when tapped.
  • Finely chop the onions and the garlic and cut in half the cherry tomato.
  • In a large pan ,  drizzle  olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Stir in the minced garlic, and cook for another 1-2 minutes until fragrant.
  • Add the cherry tomatoes to the pan. Let them cook down for about 10 minutes, stirring occasionally.
  • Pour in the white wine and bring the mixture to a gentle simmer. Let it cook for 2-3 minutes to let the alcohol evaporate and flavors to develop then add the tomato paste and let the sauce cook for another 10 minutes.
  • Season with salt, pepper, smoked paprika and chili flakes.
  • Add the cleaned mussels to the pan, cover with a lid, and steam for 5–7 minutes, shaking the pan occasionally, until all the mussels have opened.
  • Discard any mussels that haven’t opened. Sprinkle with fresh parsley and serve hot with crusty bread.
