Best chicken croquettes recipe

This chicken croquettes recipe is amazing. You need some leftover chicken and the recipe is done.  The croquettes are perfect for a snack , lunch or even dinner served with some salat or roasted vegetables. I like this recipe because you can use chicken and you can add what leftovers you have in the fridge. A perfect example is cheese, bell-peppers, zucchini, add some lemon zest , herbs, there are millions of variations and options out there.Here i have the basic recipe for croquettes….so lets get started.

 

Ingredients for the béchamel sauce:

  • 50g butter
  • 40g wheat flour
  • 500 ml milk
  • Salt and pepper

Ingredients for coating:

  • 2 eggs
  • Wheat flour
  • Bread crumbs

Methods:

  • Start by plucking the chicken breast into small sizes and put it aside.
  • Finely chop up the garlic.
  • In a sauce pan gently melt the butter and fry the garlic over medium to low heat.
  • Add the flour , mix well until the butter is absorbed into the flour. Let cook for 1 to 2 minutes and start adding the milk . An important tip is to add the milk in little portion to avoid forming lumps in the dough.
  • Season with salt and pepper and add the plucked roasted chicken.Mix well until the chicken is well coated with the sauce. For this recipe, i used about 700 g roasted chicken.
  • Put the croquettes dough in a tray covered with baking paper and level the surface with the help of a spatula.
  • Take another baking paper, gently press it and cover the top of the croquettes dough.
  • Let the dough rest in the fridge for 6 hours or over night.
  • Next day remove the backing paper on top, turn the tray over and gently pill the backing paper under the croquettes dough.
  • Cut the dough into equal sizes and shape the croquettes. The classic or traditional shape for the croquettes is cylindrical shape. You will find it easier to shape them if your hands are wet.
  • Coat the croquettes with flour, egg and bread crumbs and fry in hot oil until golden brown in colour.
  • ENJOY!
