Chicken Croquettes

Ingredients for the croquettes:

  • Leftover roasted chicken
  • 50 g butter
  • 40 g flour
  • 500 ml milk
  • Salt and pepper

 

Ingredients for coating:

  • 2 eggs
  • Flour
  • Bread crumbs

Procedure:

  • Start by plucking the chicken breast into small to medium size pieces.
  • Finely chop up the garlic and mash it with the side of the knife.
  • Melt the butter in a pan and gently fry the garlic over medium to low heat, then add the flour.
  • Mix well until the butter is absorbed into the flour, let it cook for 1 to 2 minutes then start adding the milk. An important tip is to add the milk in little portions to avoid forming lumps  in the dough.
  • Season with salt and pepper, add the plucked roasted chicken and mix until the chicken is well coated with the sauce.
  • Place the croquettes dough in a tray, level the surface with the help of a spatula , then use a baking paper and press it gently on top of the dough. Let it rest in the

fridge for about 6 hours or over night.

  • Next day remove the baking paper on top, turn the tray over and gently pill the baking paper under the croquets dough.
  • Cut the dough into equal sizes and shape the croquettes. Deep your hands in cold water to be able to easily shape them.
  • Coat the croquettes by rolling them first in flour, then egg and lastly bread crumbs.
  • Fry them in a large pan until golden in colour.
  • Enjoy!
