Easy and Quick Doughnuts filled with Crème Pâtissière & Salty Caramel!

Who says homemade donuts have to be complicated? These light, fluffy, and fast-to-make treats are filled with silky Crème Pâtissière and topped with a rich, Salted Caramel drizzle—the perfect balance of sweet, creamy, and just a touch of salty goodness!

Ingredients for the doughnut dough:

  • 600 g Flour
  • 50 g Sugar
  • 1 Sachet Dry yeast
  • 100 g Melted Butter
  • 250 ml Milk
  • 2 Eggs

Ingredients for Creme Patissiere:

  • 6 Egg Yolks
  • 80 g Sugar
  • 75 g Corn Starch
  • 500 ml Milk

Procedure:

  • In a mixing bowl add the flour, sugar, dry yeast, melted butter, the eggs and milk and using a hook attachment from a standing mixer, mix until a dough is formed. Mix for about 5 minutes until the dough is pulling away from the sides of the bowl and is smooth and stretchy.
  • Place the dough in a bowl, cover with plastic foil and let it rest and rise at room temperature until is double in size.
  • Next step in our recipe is to make the Crème Patissiere. In a medium size bowl add the egg yolks, to which we add sugar, corn starch and 50 ml milk, then with a whisk mix everything together.
  • In a saucepan over medium heat, add the milk, then pour the egg mixture and whisk constantly until the cream thickens.
  • When the cream is thickened, take it off the heat and place plastic wrap directly on top of the custard to avoid the top getting dry.
  • Let the custard cool down at room temperature then place in the refrigerator for 3 to 4 hours to set.
  • After the dough has doubled in size , place the dough on a floured surface and gently roll out at a thickness between  1-1.5 cm.
  • With the help of a circular cookie cutter cut the doughnuts. Let them rise up for 20 minutes then  fry them in hot oil in a large pot.
  • After frying, roll the doughnuts in custard sugar and place them on a baking tray.
  • The last step is cutting the doughnuts in half, but not the whole way through, fill them with the Crème Patisserie and with the help of a spoon, drizzle salty caramel over the doughnuts.
