Ingredients:
- 5 Bell Peppers
- 6 spring onions
- 1 bundle of dill
- 1 bundle of parsley
- Fresh thyme
- 150 g Arborio rice
- 250 g ricotta
- 200 g feta cheese
- 130 ml water
- Salt and pepper
Procedure:
- Start by chopping the onions and stir in a pan together with the white part of the spring onions, keep the green stem aside.
- When the onions have soften and get translucent add the rice and toast for 2 minutes, for the rice to get a nutty taste.
- Add 80 ml water and let the rice absorb all the liquid from the pan.
- Season with salt and pepper and let the mixture cool to room temperature.
- Meanwhile chop the herbs and the green stems of the spring onions.
- Take the core of bell peppers out, remove the seeds with the help of a knife and keep the stem aside to use it as a lid for the bell peppers.
- When the rice and onion mixture has cooled down, add the herbs, the green stems from the spring onions over, and mix until well combined.
- Fill the bell peppers with the mixture and place in a tray together with fresh thyme and the rest of water.
- Cover with aluminium foil and bake in the preheated oven for 80 minutes, at 180 Celsius. The last 20 minutes take the aluminium foil off for the bell peppers to roast.
- Serve with chilies!
