Ingredients:
- 9 egg yolks
- 7 egg whites
- 200 g sugar
- 200 g butter
- 200 g dark chocolate
Procedure:
- Start the recipe with melting the chocolate and the butter over a water bath or Bain Marie to create a gentle and uniform heat, so it will not burn the chocolate.
- Separate the egg yolks from the whites in 2 different bowls.
- With the help of a hand mixer whip the egg yolks together with the sugar until the egg yolks increases in volume, become creamy and pale in colour.
- To the egg yolks mixture add the melted chocolate and butter.
- With a spatula fold the chocolate into the yolks until is well incorporated.
- Also whip the egg whites until its airy, add sugar, then continue whipping until it is reaching a marshmallow consistency.
- Add the egg whites to the egg yolks and chocolate mixture, then with a spatula gently fold the egg whites until they are incorporated.
- Pour half of the batter in a cake form lined with a baking paper, then bake it in the preheated oven at 170 Celsius for 25- 30 minutes.
- The other half of batter place it in the fridge for it to set, which will be use as cream on top of the cake.
- After the cake has been baked let it cool down to the room temperature, then spread the other half of the batter over the cake.
- Let it set in the fridge for 3 to 4 hours then serve.
