This Italian dish is perfect for any day of the week . It’s quick to make , full of flavour , garlicky, sweet from the sun dried tomatoes , full of umami taste from the prawns and the linguine make you feel full and satisfied.
Served with a glass of good white wine it’s a perfect dinner for you and your family and makes you feel as you are on a trip in Italy.
Ingredients
- 350 g linguine
- 400 g prawns
- 200 g sun dried tomatoes
- 4 clove of garlic
- 50 ml white wine
- 1 small bunch of parsley
- Salt pepper
- Olive oil
Methods
- Bring a large pot of salted water to the boil. Add the linguine and boil for 8 minutes or until the linguine are al dente.
- In a large saucepan add some olive oil and gently fry the garlic . I also added a teaspoon of oil from the preserved sun dry tomatoes.
- Add the prawns over the garlic and fry for 2 minutes.
- Add the white wine and let it cook down
- At the end add the sun fry tomatoes and let everything cook for 4 minutes.
- Add the linguine and mix everything together . Cook for another 3 minute for the linguine to absorb all the flavours.
- Take the pot off the heat and add the freshly cut parsley.
- Serve with a glass of good white wine.
