Pork tenderloin

Its the best  recipe for comfort food. The pork tenderloin is tender, and goes perfectly with the rich mushroom sauce and the yellow golden delicious  polenta.It’s an explosion of flavours. You will love how easy ,quick to make and affordable this pork tenderloin recipe is.

Ingredients:

  • 700 g pork tenderloin
  • 2 cloves of garlic
  • 1 spring of rosemary

For the mushroom sauce we will need:

  • 400 g mushrooms
  • 200 ml double cream
  • 1\2 onion
  • 3 cloves of garlic
  • Salt and pepper

For the polenta we will need:

  • 200 ml water
  • 80 g cornmeal
  • Salt
  • 1 teasp butter
  • 150 g cheese as cheddar and parmesan

Methods:

  • Start by cutting the onions, garlic and mushroom for the sauce and keep them aside.
  • Clean trim and remove the connective tissue from the pork
  • In a hot pan sear the pork tenderloin. Brown the surfaces of the meat and at the end add a spring of rosemary and 2 cloves of garlic. Sear for 30 seconds more just for the rosemery to release its aromatic oils. At this step it’s ok if the meat is raw in the middle.
  • Place the tenderloin in a tray and over the pork pour all the juices from the pan.
  • Roast the pork in the preheated oven for 15 minutes at 180 Celsius.
  • After the roasting let the pork tenderloin rest for 10 minutes.
  • Next step in our recipe is to make our mushroom sauce by adding oil to a hot pan and fry the onions and the garlic.
  • Season with salt and pepper
  • After the onions and garlic have soften but they are not brown add the mushrooms and let them cook until the pan is dry and all the juices from the mushroom has evaporated.
  • At the end add the double cream and let the sauce thicken. Check the taste and if needed season with salt and pepper.
  • While the sauce is cooking , in a sauce pan add water a pinch of salt and let it boil.
  • Add the cornmeal and mix continuously so that the polenta will not burn on the bottom of the pan.
  • Add a knob of butter for creaminess and cheese for flavour. I used a mix of cheddar and parmesan.
  • After the meat have rested cut it and serve with the warm mushroom sauce , polenta and a glass of good white wine.

Serves: 3 to 4 serves

Time : 30 minutes
