Red curry soup, a gem of Asian cuisine, is a symphony of flavours in a single bowl. Ingredients:

  • 1/2 onion
  • 4 cloves of garlic
  • 50 g ginger
  • Zest of a lemon
  • 1 red chilie
  • 1 and 1/2 teaspoon red curry paste
  • Salt
  • 1.5 l chicken broth
  • 200 ml coconut milk
  • Chicken thighs or breast
  • Noodles of your choice
  • 1 soft boil egg
  • Parsley or Coriander
  • Peanuts
  • Fried tofu
  • Spring onions

Methods:

  • Start by blending in a food processor the onions, garlic, chili, lemon zest and the ginger.
  • Add oil to a pot and fry the mixture then add the curry paste.
  • Let everything fry on medium heat for about 3 minutes then add the boiled chicken thighs or breast.
  • Pour the coconut milk in the pot and let everything get to the boiling point then add the chicken broth.
  • Use a lid to cover the pot and let the soup boil for 30-40 minutes on low to medium heat.
  • Season to taste.
  • Serve the soup with boiled noodles of your choice , soft boiled eggs, fried tofu and spring onions.
  • Enjoy!
