It is summer and this strawberry tart is the perfect dessert for a sunny, hot day.

The filling is creamy, lemony which enhances the taste of strawberries and the crust, completes the tart by adding a delicious buttery taste to it.

I baked this tart for my husband birthday. I have to say our guests loved it and they finished it in minutes.

Ingredients for the tart dough:

  • 450 g flour
  • 200g sugar
  • 200 g butter
  • 2 eggs

 

Ingredients for the filling:

  • 400 g cheese cream
  • 200 g sour crème
  • Zest and the juice of 1 lemon
  • 250 g sugar

Methods

  • Start by adding in a bowl the flour, sugar, and small pieces of cold butter.
  • Incorporate the butter in the flour. I used my hands, but it can also be used a food processor for this step. After the butter has been incorporated, the texture of the mixture must be as wet sand and if it is squeezed it must hold its shape.
  • Add our last ingredient for our dough, which are the eggs and mix well until you form a dough.
  • Wrap the dough in plastic foil and let it rest in the fridge for 45 minutes.
  • While the dough Is resting it is time to make the custard cream. Add in a bowl all the ingredients for the filling on our list and mix with the help of a hand mixer until everything is well combined.
  • With the help of a rolling pin roll the cold dough to a thickness of 0.5 cm and lay it in a tart form pressing the dough evenly on the wall of the form.
  • Cut the excess dough with a serrated knife and with a fork poke holes in the dough. The porpoise of the holes is for the steam to escape under baking.
  • Bake the dough in the preheated oven for 20 minutes at 180 Celsius or until golden in colour.
  • Let the crust cool down, pour the custard cream over and bake for 4o minutes at 120 Celsius.
  • After baking, place the tart in the fridge for 1 hour.
  • Cut the strawberries in slices and place them over the tart.
  • Must be serve with good friends!

Serves :12 -14 slices

Time: 2 hours and 30 minutes
